Ingredients
8 servings

2 tablespoonolive oil

3 lbsboneless skinless chicken breasts
cut into small cubes

1 cuponion
diced

4 tablespoonsgarlic
minced

2 cuplong grain white rice
dry

6 cupsbroccoli florets

6 cupschicken stock
low or no salt

4 teaspoonsdried basil

4 teaspoonsdried parsley

4 teaspoonsgarlic powder

4 teaspoonsonion powder

1 teaspoonsalt

1 teaspoonblack pepper

½ cupgrated parmesan cheese
Instructions
Step 1
Heat a large skillet over medium high heat. Add olive oil to the pan.
Step 2
Add chicken to the pan and saute for 9-10 minutes, until the edges start to brown. (The chicken doesn’t have to be completely cooked because it will continue to cook)
Step 3
Add onion and garlic to the pan with the chicken. Saute for an additional 5 minutes.
Step 4
Stir in rice, spices and broth (leave the cheese til the end!) Cover and cook over medium heat for 10 minutes, stirring every few minutes. (Pro Tip: to speed up cook time, microwave your broth until warm before adding to the pan)
Step 5
After 10 minutes, add broccoli. Stir together, cover and cook for an additional 5 minutes.
