Instructions

Step 1
In a skillet over medium high heat, add oil

While the oil heats up, dice your onion
Step 3
Add the onion and minced garlic to the skillet and sauté
Step 4
While the onions sauté, cube your chicken breasts
Step 5
Once the onions are translucent, add in your chicken

Season to taste

While the chicken cooks, chop your zucchini
Step 8
Brown the chicken on all sides then add rice, diced tomatoes, zucchini and chicken broth
Step 9
Add more seasoning, stir and bring to a simmer
Step 10
Once simmering, cover and turn the heat to low. Let cook for 20 minutes
Step 11
Once done, uncover and stir. Let sit for 5 minutes before serving
