Step 1 Preheat a griddle pan over a high heat.

Thread the halloumi, pepper and courgette chunks onto skewers and brush with half of the oil.

Lay on the griddle pan and cook for 5-6 minutes, turning occasionally until lightly charred.

Step 2 Meanwhile put the remaining ingredients into a small food processor and blend to a smooth paste.

Top the halloumi kebabs with the pesto and serve.
