Instant Pot Bacon Cheeseburger Pie

The base recipe and cooking instructions for this dish came from the Instant Pot app. Years ago, I had an incredible cheeseburger soup where the pickle, ketchup, and mustard really came through for a classic burger taste. Trying to replicate the flavors of that dish, we added those ingredients here. The original recipe called for beef, but my family uses ground turkey wherever we can. We also wanted more veg, so we threw in the tomatoes and peppers, and of course, we had to add bacon. If you have a favorite burger topping, add it to the mix!

Instructions
Step 1
Saute turkey until brown with the black pepper and onion. Add ketchup and mustard right before it's done. Mix well.
Step 2
Cook the bacon until done. Crumble when cool. Mix with ground turkey.
Step 3
Put the turkey and bacon in an Instant Pot cake pan and spread across the bottom. Add the diced peppers, chopped spinach, diced pickles, and diced tomato. Add cheese across the top.
Step 4
In a separate bowl, combine the pancake mix, egg, and milk. It should be a little runnier than when you're making pancakes. If you're cutting the recipe in half, keep the mix, milk, and egg the same, as your surface area hasn't changed. Mix the mix and pour it over the layers of meat, veggies, and cheese. Cover the pan loosely with foil.
Step 5
Add 1 1/2 cups water to the Instant Pot. Dangle the cake pan into Instant Pot with an Instant Pot pan holder. Pressure cook for 20 minutes. Vent naturally 5 minutes before releasing pressure
Step 6
Add an additional sprinkle of cheese on top if desired and broil for 4 minutes.
