Ingredients

1 packageturkey polish sausage
nitrate-free, cut diagonal into 1/2 inch thick slices
1onion
sliced
1bell pepper
cut into 2-inch pieces
1 poundasparagus
trimmed, cut into 2-inch pieces
1 ½ cupgrape tomatoes
halved
3 tablespoonsolive oil
or avocado oil
1 teaspoonkosher salt
¼ teaspoonblack pepper
1 teaspoonitalian seasoning
1 teaspoonpaprika
½ teaspoongarlic powder
Instructions
Step 1
Preheat oven to 400 degrees Fahrenheit. Line a large baking sheet aka sheet pan with parchment paper.
Step 2
On one side of the sheet pan, arrange the sausage in a single layer. Roast in the over for 12 to 15 minutes, until it starts to brown on the bottom.
Step 3
Meanwhile, in a large bowl, toss together the vegetables and set aside.
Step 4
In a small bowl, add the oil, salt, pepper, Italian seasoning, garlic powder, and paprika and whisk until combined. Pour this mixture over the vegetables and toss to coat.
Step 5
When the sausage is done, remove the sheet pan from the oven and flip the sausage pieces oven. Arrange the vegetables on the other side of the sheet pan. Place sheet pan back into the oven and roast for 18 to 20 minutes, until the vegetables are tender and the sausage is browned.
