Instructions

Step 1
• Immerse bread in water to soak.
Step 2
• Cut tomatoes in chunks and blend w/ seeded pepper, cucumber, onion and garlic, set aside.
Step 3
• Squeeze water from bread and puree. With motor running add oil in a slow stream until incorporated into the bread. Then add the salt, cumin and vinegar.
Step 4
• Then mix with the tomato puree.
Step 5
• Correct w/ seasoning and vinegar.
Step 6
• Chill
