Borani Banjan (Eggplant Tomato Stew) — We're Eating
Inspired by Afghan and Turkish cuisine, I don’t think I can ever get tired of fried eggplant in a delicious tomato sauce, topped with a garlic yogurt sauce. Add some eggs with some pita, now that’s a meal.
