Step 1
Cut the peppers in half. Core and de-seed. Put them in a pan skin side down. Bake at 450° while you make the stuffing. In a frying pan saute the onions. Add the sausage, beef, and taco seasoning. When it's browned drain the excess grease. Add the canned items, chipotle paste, and rice. Heat through. Put stuffing in the pepper halves, top with cheese and bake at 450° for 20 minutes.
