10-Minute Chia Seed Jam with Cream Cheeze Sandwiches

Ingredients

1 poundfresh strawberries
hulled, green stems removed
2 tablespoonsmaple syrup
or to taste
1 teaspoonlemon juice
plus more to taste
2 tablespoonschia seeds
For the sandwich:
Instructions
Step 1
Place the strawberries in a food processor. Pulse until roughly chopped, with some larger chunks remaining. Alternatively, roughly chop them using a knife.
Step 2
Transfer the chopped strawberries to a medium saucepan. Add maple syrup, and lemon juice. Simmer over medium-high heat for about 5 minutes, or until the berries break down and start to bubble, stirring occasionally. Mash until the desired consistency using a potato masher.
Step 3
Remove from the heat and stir in the chia seeds until fully incorporated. Adjust maple syrup, and lemon juice to taste.
Step 4
Set aside for 5 minutes to cool and thicken. Give the jam a good stir.
Step 5
Use immediately, or transfer to glass storage containers with lids. (I use Mason jars.) Refrigerate the strawberry jam for up to one week or freeze for up to 3 months.

Toast sourdough or bread of your choice until lightly crispy. Slather each slice generously, one with Daiya cream cheeze, and the other with strawberry chia jam. Enjoy.
