Skillet Tuscan chicken

Creamy tuscan chicken, packed with spinach and tomatoes in a thick and creamy parmesan garlic cream sauce! You can serve this alone as a low carb dinner or on top of your favorite pasta for a filling delicious meal!

Instructions

Step 1
Preheat the oven to 375°

In a cast iron skillet or an oven safe skillet add 1 tbsp oil and sear 4 chicken breast 2-3 minutes each side.

Take the chicken out, set aside,

add 2 minced garlic cloves to the skillet. Cook 1 minute
Step 5
add 1 cup cherry or grape tomatoes, salt & pepper to taste, 1 tbsp Italian seasoning, 1 cup chicken broth and 1/2 c heavy cream. Bring to a boil,

add in 2 cups spinach. Let it wilt and add the chicken back in.
Step 7
Cover everything with 1 cup shredded cheese (mozzarella or parm) bake in the oven 20 minutes or until the chicken is cook through.
Step 8
Serve alone or with pasta
