Ingredients

¼ cupmaple syrup
2eggs
¾ cuplactose free Greek yogurt
2carrots
shredded
1 tspstevia
or 1/4 cup sugar free maple syrup
½ cupoat flour
½ cupall purpose flour
1 ½ tspbaking powder
1 Tbspcinnamon
Frosting
Instructions
Step 1
Mix maple syrup, stevia, eggs and yogurt together
Step 2
Add shredded carrots, flours, baking powder, and cinnamon and stir to combine
Step 3
Pour into greased loaf pan
Step 4
Bake at 350 degrees Fahrenheit for 35-45 minutes, until a toothpick inserted comes clean
Step 5
Let the carrot cake cool down or else the frosting will melt!
Frosting
Step 6
Mix the ingredients of the frosting together, and add to the cooled loaf. Top with walnuts (optional)
