1 scoopvanilla milkshake protein powder

2eggs

¾ cupunsweetened almond milk

½ cupzero-calorie sweetener

¼ cupunsweetened applesauce

1 teaspoonvanilla extract

½ teaspoonalmond extract

¼ cupcoconut flour

¼ cupalmond flour

1 tablespooncoconut oil
melted

1 teaspoonbaking powder

½ teaspoonbaking soda

½ teaspoonsalt

½ cupfresh blueberries

Instructions
Step 1
Preheat the oven to 350°F.

Step 2
Line a muffin pan with paper-lined standard-sized muffin cups.

Step 3
Cut Quest Bars® into tiny pieces and set aside.

Step 4
In a mixing bowl, combine eggs, almond milk, applesauce, sweetener, vanilla extract, and almond extract. Mix well.

Step 5
In another small bowl, combine Quest® Protein Powder, coconut flour, and almond flour. Mix well.

Step 6
Add dry mixture to wet. Then add coconut oil, baking powder, baking soda, and salt.

Step 7
Fill muffin cups 3/4 full. Add Quest Bar® pieces evenly among each muffin and add blueberries to the top of each muffin.

Step 8
Bake for 18 to 20 minutes, or until an inserted, toothpick comes out clean
