Instructions

Step 1
Place chicken, water, vinegar, onion, carrots and celery in a large soup kettle
Step 2
Add more water if necessary to cover chicken. Bring to a boil. Reduce heat; cover and simmer until meat nearly falls off the bone.
Step 3
Strain broth and return to kettle. Reserve chicken meat; re-move and discard bones and vegetables. Cut meat into bite-size pieces; set aside.
Step 4
Reserve 1 cup broth; cool to lukewarm.
Step 5
For dumplings, combine flour and salt. Make a well in flour; add egg.
Step 6
Gradually mix 1/4 cup broth into egg, stirring until all flour is incorporated into dough.
Step 7
Add additional broth as needed so dough is consistency of pie dough.
Step 8
Pour any unused reserved broth back into kettle.
Step 9
Turn dough onto floured surface; knead in additional flour to make a stiff dough. Allow to rest for 15 minutes.
Step 10
Roll out dough on a floured surface into a 17-in. square. Cut into 1-in. square pieces.
Step 11
Dust with additional flour; set aside to dry for 30-60 minutes.
Step 12
Skim fat from broth; bring to a boil (there should be about 4 qts.).
Step 13
Drop dough into boiling broth; reduce heat. Cover and simmer for 10 minutes.
Step 14
Uncover; cook until dumplings test done, about 30 minutes.
Step 15
Add pepper and chicken; heat through. Yield: 10 servings.
