Tortilla
Step 1
Peel the potatoes. Cut in half and then slice.
Step 2
Dice the onion.
Step 3
Heat the oil in a large pan. Reduce the heat to medium. Add the potatoes and let fry for about 8min stirring occasionally.

Then add the onion and fry for 2 more minutes.
Step 5
In a large bowl add the eggs and seasoning. Whisk until well combined.
Step 6
Add the potato and onion mixture without the excessive oil. Whisk again.
Step 7
Pure 2 tbsp of the removed olive oil into the pan. Leave the heat on medium. Then pure in the potato egg mixture. Make sure the bottom of the pan is covered completely. Fry for about 2-3min.
Step 8
Place a plate onto the tortilla. Then flip it and place it into the pan again. Fry for another 2-3min.
Step 9
Cut the tortilla into large squares.

Step 10
Cut the baguette in half. Spread the bottom half with the mayonnaise.
Step 11
Place the tortilla on top.
Step 12
Stack the other baguette half on top and enjoy!
