Step 1
Cut the potatoes and the onion into thin slices
Step 2
In a deep pan, add the olive oil and, on medium heat, cook the potatoes and onion together for about 20 minutes, until starting to brown and caramelise (cover and stir/break the potatoes occasionally)
Step 3
In a bowl, break and beat the eggs with the salt. Remove the potatoes and onion from the pan and move them into the bowl, leaving the oil behind
Step 4
Take a smaller pan and add about 1tbsp of the oil for cooking. Once hot, add the egg, potato, onion mixture to it and cover. Cook for 5-6 minutes on medium high heat
Step 5
Cover the pan with a plate and flip. Slide the tortilla from the plate back into the pan and finish cooking (another 3-4 minutes) uncovered and serve!
