Instructions

Step 1
1. Mix the dough ingredients together, knead for 5 minutes, and leave to rest for at least 30 minutes.

2. Peel and dice the veg, toss with the salt, oil, and curry powder, and roast for 30 minutes at 200. Dice the coriander, chilli, and garlic, and add to the veg with the vinegar, garam masala and sugar, and thoroughly mix and mash.

Step 3
3. Divide the dough into 8 balls, and roll out into a 15-20cm circle. Cut each circle into 2, and wet half of the flat edge. Pick up by the fry half on your finger, and fold the wet half into the dough on your finger to form a cone. Hold the come inside a ring with your index finger and thumb and use the other hand to spoon the filling inside. Have a cup of water on standby, and use it to dip your finger and wet the edges and press together. Repeat with all the dough and filling.

4. Either deep fry for 8-10 minutes at 180C, or brush with oil and air fry for 10 minutes or oven cook for 15-18 minutes at 180C.
