Instructions
Step 1
Preheat the oven to 180c degrees

Step 2
In a bowl, beat together the ROOM TEMPERATURE butter (if it is melted at all these cookies will be super tacky to handle) with the brown and white sugar until creamy. If using caramel, put 170 grams brown sugar and 60 on white sugar

Add in the vanilla extract, egg yolk, baking soda, and cornstarch. (Add 1/4 teaspoon salt here if using unsalted butter)
Step 4
Beat until just combined.
Step 5
Add in the flour and chocolate chips and beat until just combined. If adding caramel use three caramels
Step 6
Place dough in freezer for 5- minutes until dough can be rolled
Step 7
Form balls of cookie dough round 50g each. . Put 4 cookies on square baking sheet. Flatten slightly and if needed, add more chips or caramel chuncks on top
Step 8
Bake for 15 minutes or until very lightly browned around the edges.
Step 9
Remove from oven and leave them on pqn for 2 minutes. During that time, flatten them with a spatula. Then remove baking paper sheet onto cold surfice.
