Instructions
Step 1
Slice eggplants into thin slices
Step 2
Salt each eggplant and let it sit for an hour
Step 3
Add olive oil, garlic, onion and tomato purée in a pot. Then add salt and basil. Let the sauce cook for about 30 min
Step 4
Rinse salt off of eggplants, dry them
Step 5
Grill eggplant, making sure to coat each side with olive oil.
Step 6
In a baking dish layer the eggplant. Add eggplant, the add the sauce on top, then cheese and a few pieces of basil. Repeat two more times.
Step 7
Add in over at 400 degrees for 20min
