Mexican Scotch Eggs

Ingredients
4 servings
4 Tbsplain flour
4eggs
medium, soft boiled, approx
2eggs
whisked, for coating
80gtortilla chips
crushed, for coating
4sausages
one sausage for each scotch egg
½ tspgarlic powder
½ tspchilli flakes
or powder
1 tsppaprika
salt
pepper
¼ tspground coriander

Instructions
Step 1
Prep your 3 shallow bowls 1 each of egg, flour and tortillas ready for coating
Step 2
- take skin off sausages and mix together all of the sausage meat ingredients
Step 3
-divide into 4 equal balls and flatten them in your palm
Step 4
-with floured hands gently roll egg in flour
Step 5
-wrap sausage meat evenly around each egg
Step 6
- roll the sausage coated egg in the flour, egg then crushed tortilla chips
Step 7
-repeat the egg and tortilla layers
Step 8
-chill in fridge at least 30min to firm up
Step 9
-deep fry 5min OR spray with oil and put in 180 oven 20min OR airfryer 12 mins
Step 10
- turn halfway through cooking
Step 11
- cool 10 min before slicing in half

MASH ALL INGREDIENTS TOGETHER IN A BOWL OR BLENDER - CHILL UNTIL READY TO SERVE
