2 tablespoonsolive oil
2 tablespoonslime juice
⅛ teaspoonlime zest
1clove garlic

⅛ teaspoonsalt
⅛ teaspoonblack pepper
Dip (Salad)
¼ cupcanned black beans
rinsed and drained
¼ cupcanned black-eyed peas
rinsed and drained
¼ cupcanned corn
rinsed and drained
¼ cupred bell pepper
chopped
1tomato
small, chopped, I use 1 Roma or Plum tomato
0.5avocado
small, diced
2 tablespoonsjalapeño pepper
chopped
2 tablespoonscilantro
chopped
tortilla chips
for serving
Instructions
Step 1
In a small bowl, whisk together olive oil, lime juice, lime zest, garlic, salt, and black pepper. Set the dressing aside to use later.
Step 2
In a medium-sized bowl, stir together beans, black-eyed peas, corn, chopped red bell pepper, chopped tomato, diced avocado, chopped jalapenos, and cilantro.
Step 3
Pour the dressing over the vegetables and gently stir to make sure the dressing coats everything.
Step 4
Pour into a bowl and enjoy as a dip with tortilla chips or as a salad.
