Homestyle Chicken and Rice Casserole
This is the classic American version of the tried-and-true chicken casserole. There are many variations of this dish, but no matter which one you choose, nothing says comfort more than a piping hot, heaping mount of chicken and Rice casserole.

Ingredients
6 servings
12 tablespoonsdairy free butter
divided
1 cupwhite button mushrooms
chopped
1 cupcelery
chopped
½ teaspoonminced garlic
½ cupgluten free all purpose flour
with xanthan gum
1 teaspoondried thyme
1 teaspoononion powder
3 cupsgluten free chicken broth
½ teaspoonsalt
⅛ teaspoonground black pepper
⅛ teaspoonground nutmeg
1 ½ cupsunsweetened almond milk
4 x 6 ounceboneless skinless chicken breasts
cubed
2 cupswater
2 cupsinstant white rice
Instructions
Step 1
Preheat oven 400 degrees. Spray a 9 x 13 baking pan with gluten free nonstick cooking spray
Step 2
In a large skillet, heat 4 tablespoons butter over medium high heat. Saute mushrooms, celery, and garlic until tender, about two to three minutes. Sprinkle with flour, thyme, and onion powder, stir to coat vegetables, stir in broth, salt, pepper, and Nutmeg. Stir the mixture until flour dissolves. Bring soup to a boil and stir for two minutes until Thickened. Reduce the heat to low simmer and stir in milk. Simmer uncovered for 10 to 15 minutes. Add chicken, water and rice to the mixture and stir to combine.
Step 3
Pour the mixture into prepared baking pan. Place remaining butter evenly over the top of the chicken moisture.
Step 4
Bake for 60 minutes to 75 minutes, until rice is tender and chicken is cooked through. Cool 15 minutes before serving.
