Step 1
Cook pasta according to package directions. Strain and set aside.
Step 2
Heat oil in a large saucepan on low-medium heat. Stir in vegan ground beef. Cook for ~5 minutes, stirring occassionally.
Step 3
Add water and taco seasoning. Stir well to coat and cook for another minute or two.
Step 4
Stir in salsa, tomatoes, chiles, and cheese.
Step 5
Cover and allow to cook on medium-low, until cheese has melted, stirring occassionally.
Step 6
Stir in the cooked pasta and season with salt and pepper.
Step 7
Serve topped with cilantro and more cheese, if desired.
