½ cupvegetable oil
1 teaspoonvanilla
1 cupsugar
1 cupall-purpose flour
a gluten free all-purpose mix or even just plain rice flour work great
½ teaspoonsalt
¾ teaspoonbaking soda
½ teaspoonbaking powder
1 teaspoonground cinnamon
½ teaspoonground ginger
¼ teaspoonground nutmeg
⅛ teaspoonground cloves
Instructions
Step 1
Preheat oven to 350ºF (180ºC).

Line a standard sized loaf pan with tin foil.
Step 3
Combine the pumpkin, eggs, oil, and vanilla. Add the sugar and mix well.
Step 4
Combine the flour, salt, baking soda, baking powder, and spices. Add to the wet and mix just until combined.
Step 5
Pour into the loaf pan and bake for about 45 minutes or until a toothpick comes out clean. Allow to cool before removing from pan. The tin foil will peel right off.
Step 6
This recipe also makes one dozen muffins. Bake at 375ºF (190ºC) for 20 minutes.
