Step 1
Fry the onion, garlic and ginger in the rapeseed oil for 5 mins until soft
Step 2
Add chicken and fry for a further 5 mins or until browned
Step 3
Once browned, add curry paste and fry for a further 5 mins.
Step 4
Add 3/4 of the coconut milk and simmer for 20 mins
Step 5
Meanwhile, cook rice according to packet instructions, when 5 mins away from finished, add the remaining coconut milk and the kidney beans.
Step 6
Once the 20 mins are up from the chicken simmering, Add mango and coriander and simmer for another 5 mins
