Instructions
Step 1
Preheat the oven to 350º degrees F. Grease and flour (or line with parchment paper) a dark metal loaf pan. Set aside.
Step 2
In a medium sized bowl, whisk together the flour, nutmeg and baking soda. Set aside.
Step 3
In the bowl of a stand mixer with the paddle attachment (or a large bowl with a hand mixer) on medium speed, cream together the butter, sugar and salt until smooth. About 2-3 minutes.
Step 4
Mix in eggs, one at a time until incorporated. Mix in vanilla. Add riped bananas (I like to cut them up a little bit). Mix until incorporated.
Step 5
Add the dry ingredients to the wet ingredients, a little at a time, alternating with the lemon juice until both are fulling incorporated. Gently fold in the lemon zest.
Step 6
Pour into prepared loaf pan and bake at 350º for 55-65 minutes until the top is golden brown and a toothpick or knife inserted into the center comes out clean. Remove from the oven and let cool in the pan for about 15 mins (basically until you can safely remove it without it being to hot to handle). Turn out the loaf and place on a wire rack and allow to cool. Slice it up while it is still warm out of the oven (yum!) or allow to cool completely before packaging for storing or gifting.
