Instructions
Step 1
Place all ingredients but the tomato juice in large stock pot, filling pot with water until carcass is completely covered.
Step 2
Bring water to a boil and reduce heat to low heat.
Step 3
Reduce turkey broth by half (approximately 2-3 hours.)
Step 4
Remove all bones and vegetables. (Leave any turkey meat in pot.)
Step 5
Add tomato juice to broth.
Step 6
Bring to a boil. Reduce heat to medium and continue cooking for 15-30 minutes.
Step 7
Serve in bowls with shredded roasted turkey.
