Spinach and ricotta tortellini with salsa verde

Instructions

Step 1
Bring a large saucepan of water to the boil.
Step 2
Meanwhile, make the salsa verde.
Step 3
Chop the parsley, garlic and capers as finely as you can.
Step 4
Scrape into a bowl and, using a fork, whisk in the dijon mustard and olive oil.
Step 5
Season with salt and pepper and lemon juice to taste.
Step 6
Season the boiling water with a little salt then drop in the tortellini.
Step 7
Cook according to packet instructions then drain into a colander.
Step 8
Shake off any excess water then put the pasta back into the pan and stir through the salsa verde.
Step 9
Shake everything together so each piece gets coated in the sauce.
Step 10
Pile into a bowl and sprinkle over the grated cheese.
