Fried Okra

The proper texture of fried okra is almost a matter of religious fervor in the South. The vegetable must be crunchy on the outside but tender inside, all while maintaining its distinctly grassy but sweet flavor.
For the best success, look for thin small okra. (Large okra can be too fibrous.) And coat the pieces deliberately and carefully with the vegetable oil spray. In fact, coating them is the most time consuming part of this process. But the results are just right for you next barbecue.

Step 1
With the basket in the air fryer, heat it to 400°F.

Set up and fill three shallow soup plates or small pie plates on your counter: one for the corn starch, one for the buttermilk, and one for the cornmeal, whisked with the flour and Old Bay until well combined.
Step 3
Set some of the okra pieces in the cornstarch, then toss them around to coat evenly and well. Pick the pieces up with a flatware fork (using the fork as a shovel not a spear) and gently shake off any excess cornstarch. Set the pieces in the buttermilk and gently turn them to coat them on all sides. Use the fork to shovel up the okra once more, letting any excess buttermilk slip back into the rest. Set the okra pieces in the cornmeal mixture and gently turn them to coat them on all sides. Gently shovel them up and set aside. Continue coating the remainder of the okra in the same way.
Step 4
Generously coat the okra pieces on all sides with the vegetable oil spray. Set them I the basket in as close to one layer as you can. Some may be touching - but the fewer that do touch, the better. Even a fraction of a inch between the pieces will work. Air fry undisturbed for 8 minutes, or until crisp and brown.
Step 5
Gently dump the contents of the basket onto a wire rack. Cool for a couple of minutes before serving.
