Balsamic Beets and Greens

Instructions
Step 1
Remove greens from beets. Cut off stems. Coursely chop beet greens.
Step 2
Put beets in saucepan and cover with water. Boil until you can stick a fork through.
Step 3
Meanwhile, sautée garlic in olive oil for 1 minute.
Step 4
Sauté until greens are tender and most of the liquid has evaporated.
Step 5
Add balsamic vinegar, honey, Dijon mustard and cayenne pepper.
Step 6
Simmer until liquid is reduced.
Step 7
Peel and chop cooked beets.
Step 8
Add beets to greens and heat through.
