Instructions
Step 1
In a large mixing bowl, place ground beef, bread crumbs, eggs, and seasonings. Mix with your hands until well blended.
Step 2
In a medium skillet, add some vegetable oil - enough to cover about 1/4" from the bottom of the pan. Heat on medium/high heat

While the oil is heating up, take your meat mix and form your meatballs. About 1 inch in diameter
Step 4
once oil is heated, place meatballs one at a time into pan with tongs. Fry each side on the meatball (4) until well cooked. About 3-4 mins on each side

place meatballs onto a paper towel lined plate to absorb the extra grease
Step 6
In a medium size pot, add 3-4 Tbsp of dark roux. Turn stove to medium/high heat and add water as the roux starts to melt. Stir often to avoid burning. Once roux is pretty liquid, add onions and bell peppers.
Step 7
Cook roux, onions, and bell peppers about 15 mins... stirring occasionally and adding more water as needed to avoid sticking or burning
Step 8
Add meatballs and more water, enough to make sure the meatballs are floating. Bring to a boil and cook on low for about 45 mins.
Step 9
Stir occasionally to avoid any burning. This is when you taste your gravy to make sure you don't need any additional seasonings.
Step 10
Turn off heat and allow to cool with lid on. It will make the gravy thicker.
