Step 1
boil the kettle and set out: a saucepan for the pasta, a frying pan for the pancetta and a small dish for the egg, cheese and pepper mix
Step 2
add the boiling water to the saucepan, place over medium high heat and throw in 1tsp salt and the tagliatelle; cook until al dente
Step 3
squash the garlic cloves under a knife and add the cloves and pancetta to the melted butter
Step 4
cook the pancetta on medium heat for about 5 mins, stirring often, until golden and crisp. remove the garlic cloves.
Step 5
beat the eggs in a small dish with 1/2tsp ground pepper and mix in the grated cheese
Step 6
keep the heat under the pancetta on low. when the pasta is ready, extinguish the heat from under the pancetta and lift the tagliatelle out of the water and into the frying pan, allowing some water to get into the pan. keep the hot water.
Step 7
pour in the eggs and cheese, and lift and fold the tagliatelle to mix everything together. the heat should be enough to keep the food hot but not cook the eggs. add a few tablespoons of the hot water.
Step 8
twist the tagliatelle onto plates and serve with a sprinkle of parmesan and a grating of pepper.
