Instructions

Step 1
Make enchilada sauce if necessary. Preheat oven to 450°F. Oil pan.
Step 2
Microwave peppers 2 1/2 minutes or saute them 5 minutes, preferably in pan used to make enchilada sauce. Add meat, 1/2 cup sauce, and beans; mix. Microwave 1-3 minutes or heat 5 minutes, stirring. Stir in cilantro and 1 1/2 cups cheese; set aside.
Step 3
Soften and fill tortillas. Roll tortilla around filling. Place seam- side down in prepared pan. Pour sauce over. Sprinkle with cheese.
Step 4
Cover disj and bake until heated through, ~10 minutes. Remove lid and bake until cheese is melted, ~5 minutes. Serve.
