Instructions
Step 1
break the eggs into a tall narrow contained that fits your stick blender
Step 2
blend eggs for 20 seconds with stick blender
Step 3
Add all the ingredients with EXCEPTION to the lemon juice
Step 4
Leaving the blender at bottom, switch it on and slowly pull it upwards. Follow the clouds (emulsification) upwards until a tick sauce appears
Step 5
Stir in the lemon juice and add salt & pepper to taste
