Ingredients

2 Tbspoil
1eggplant
cut into bite size
1 tspsesame oil
1 tspChiu Chow Chili Oil
1green onion
sliced for garnish

Instructions
Step 1
Cut eggplant into bite-size, and soak into a bowl of water for about 15 minutes. Drain water, and put it aside.
Step 2
Heat oil in a large skillet over medium heat, add eggplant. Sautee until lightly browned. Transfer to a plate.
Step 3
The same skillet over medium heat, no oil, add ground pork and cook until no longer pink.
Step 4
Add 2 tsp sweet bean sauce, sake, mirin, and soy sauce. Cook for about 1 minute, transfer to a bowl and set it aside.
Step 5
The same skillet over medium heat, add oil, chili bean sauce, garlic, ginger, and mix.
Step 6
Add chicken broth, cooked pork, sugar, sake, and 1 tbsp sweet bean sauce, and let it simmer.
Step 7
Add chopped green onions and potato starch water (2 tsp potato starch dissolved to 4 tsp water) and mix well.
Step 8
Add to cooked eggplant mix. Add chili oil and sesame oil.
Step 9
Serve with sliced green onion on top.
