Instructions
Step 1
Mix starter, water, oil, salt, and honey. Add flour and autolyse 20-30 min.
Step 2
Knead by hand or in stand mixer every 20-30 min until it is very strong and comes into a good ball. Transfer dough to a lightly oiled bowl (olive oil shines here, pun noted). Let ferment 2-4 hours or until it has risen substantially.
Step 3
Divide dough into 4 balls. Shape them into very tight boules and place on a baking sheet with enough space to spread. Let ferment and rise 3-4 hours.
Step 4
Preheat oven to 525.

Lightly spread cornmeal of flour on parchment paper, plop one dough ball there, and press from far side to near side, rotating and repeating until pizza is desired size. Add sauce and top with whatever makes your heart sing.
Step 6
Cook (preferably on a pizza stone/peel) about 7-9 minutes, or until you can't take it anymore.
