Instructions

Prep

Step 1
Preheat oven to 220 degrees Celsius. Bring a large saucepan of water to the boil and add 1/4 salt. Peel potatoes and slice into 1pm wide rounds. Once water has boiled add potatoes. Cool until soft 12-15 mins.
Step 2
Peel, halve and slice the onion - thinly or in little chunks. Then thinly slice the mushrooms as well as trim the carrot and cut into little chunks (peel if you want). Peel and chop garlic cloves (garlic press).
Step 3
Pour the breadcrumbs into a bowl and add the olive oil. Season with salt and pepper.

Step 4
Heat a drizzle of oil (or 1 cal spray) into a pan on medium heat. When ready, add chicken chunks and season with salt and pepper. Cook until browned 6-8 mins.
Step 5
Once the chicken is cooked, put this to the side on a plate. Add more oil to the pan and add the onion and carrot. Cook until soft 5-8 mins. Then add mushrooms and turn the heat up slightly. Cook all for 5 mins until mushrooms are browned. Add the garlic clove and cook for a further minute.
Step 6
Add 200ml water to the pan as well as the chicken stock powder. Bring to the boil until powder is dissolved. Add Creme Freiche and bring back to the boil for a minute and then turn down to simmer until reduced by 1/3 - 3-4 mins. Once reduced, add chicken and season with salt and pepper.
Step 7
Transfer chicken and sauce into an ovenproof dish and add the cooked potato slices on top covering it all. Season with black pepper and sprinkle over the breadcrubs. Bake on top shelf for 10-12 mins until golden. Then serve!
