Bacon Buckaroo Burgers with BBQ Caramelized Onion & Cheesy Loaded Potato Rounds

This is a bacon-loaded, bodaciously beefed up creation that’s chock full o’ bold flavors sure to satisfy. Beef patties are topped with melty gouda, tangy pickles, and a heap of BBQ caramelized onions. On the side, there’s a pile of cheesy loaded potato rounds with all the fixin’s. You’re bacon me hungry, partner!

Instructions

Preheat oven to 450 F

Step 1
Adjust rack to top position Toss potatoes on a baking sheet with lg. drizzle of oil, half the Fry Seasoning (you’ll use the rest later), salt, & & pepper. Arrange in a single overlapping layer. • Roast on top rack until lightly browned, (20 min.) (you’ll add more to the sheet then).
Step 2
Meanwhile, melt bacon fat in med. pan over med.-high. Add onion & half of crumbled bacon. Cook (8-10 min.), stirring occasionally, until softened & lightly browned (Lower heat if onion begins to brown too quickly.) • Stir in half of BBQ sauce (save rest for serving); cook (2-3 min.) until warmed through; turn off heat.
Step 3
In lg. bowl, combine beef, minced onion, remaining crumbled bacon, remaining Fry Seasoning, & salt, Form 2 patties, each slightly wider than bun. Heat pan with bacon fat over med.-high; add patties & cook (3-5 min. per side) to desired doneness. In the last 1-2 min. of cooking, top each patty with gouda & cover pan until cheese melts.
Step 4
Once potatoes have roasted, remove from oven; evenly sprinkle with pepper jack & chopped bacon. Return to oven (5-7 min. longer) until cheese melts & potatoes are tender. Meanwhile, toast buns until golden.
Step 5
Spread buns with remaining BBQ sauce. Top with patties, caramelized onion, pickle & bacon slices. Divide burgers & potatoes between plates. Garnish potatoes with sour cream & scallions; serve.
