Caramelised Red Onion Smash Burgers

Instructions

Step 1
Finely slice the onions.
Step 2
Add 5 tablespoons of oil to a frying pan along with the white wine vinegar and then add the onions, stir and coat in the oil and vinegar and heat on medium-low heat.
Step 3
Keep cooking and stirring the onions to ensure they caramelise evenly.
Step 4
In the meantime add the mince to a bowl along with the paprika, msg, chilli flakes, salt and pepper, finely grate the garlic, ginger and gherkin into the bowl and mix well, squeeze the mixture through your fingers until all the ingredients until combined.
Step 5
Once the onions are caramelised remove them from the pan and finely chop then add into the bowl with the mince.
Step 6
Mix the onions into the mince, be careful as the onions will be hot but will soon cool, and ensure the ingredients are well combined. Separate the mixture into 8 equal portions (78g) and roll into balls. Press each ball into patties wider than the buns you are using which allows for shrinking during cooking.
Step 7
Heat a girdle pan and place the patties in cook for around 1-2 minutes then turn the patties over and add a slice of cheese to each patty.
Step 8
Cook for another minute and then remove and allow to rest.
Step 9
Dip the brioche buns in the oil from the patties then clean out the pan and return to the heat. Place the buns back into the pan and allow to toast.
Step 10
Time to build.
Step 11
Add sauce to the top and bottom of the buns next a lettuce to the bottom bun along with tomato and bacon bits.
Step 12
Add the double patties, more tomato and bacon bits and some of the crispy onions and top with the top of the bun, lick your lips and enjoy
