This spicy tomato sauce comes from Shareen Campbell & Phil Saunter, lately of Los Gatos tapas bar. Normally served with potatoes roasted then finished in the sauce, this is now a freezer staple in our house. It can be used to whip up really quick, tasty meals in a few moments, and freezes well. It goes especially well with Ikea Swedish Meatballs!

Instructions
Step 1
Tip the tomatoes into a pan then rinse the tin half full of water and add to the tomatoes with the hot and sweet paprika, thyme and salt.
Step 2
Bring everything to a simmer and cook gently for 25 minutes, stirring occasionally.
Step 3
Cool slightly then liquidise with a stick blender. Check the seasoning and add more salt if liked.

If using immediately then return to the pan with chosen content or pour over roasted potatoes and return to oven for 10-15 minutes. Alternatively, allow to cool completely, divide into approximately 50g portions and freeze (e.g. in ice cube trays)
