Instructions
Step 1
In a food processor process cookies into crumbs. In a large bowl combine cookie crumbs and melted butter. Mix well.
Step 2
Cover the bottom of the cake tin with cling film and line the acetate strip inside the cake tin.
Step 3
Dumb the cookie crumbs into the prepared cake tin and press firmly, using the bottom of the glass. Pop in the fridge for at least 20 minutes.
Step 4
In a microwave-safe glass soak the gelatine in ice-cold water and set aside
Step 5
Halve about 300g of the strawberries(you may need more or less, choose only small strawberries for this) and place them around the edge of the tin(cut side facing outwards) and pop them back in the fridge.
Step 6
In a large bowl whisk together cream cheese, double cream, icing sugar and Nutella until thicken.
Step 7
Microwave the gelatin in pulses of 10 seconds until the gelatin is dissolved and liquid.
Step 8
Pour liquid gelatin into the cream cheese mixture and whisk until well combined. Don't whisk too long, as the mass will thicken fast.
Step 9
Transfer half of the mass to the piping bag and fill in all space between strawberries first. Then add the rest of the cream cheese mixture and smooth the top.
Step 10
Place in fridge for 4 hours minimum.
Step 11
Before serving decorate with strawberry slices and mint leaves.
