Instructions
Step 1
Season beef with salt and pepper. Heat 1 tbs of bacon grease in a pot over medium-high heat. Brown beef on all sides.
Step 2
While waiting for the beef to brown, chop the onion, garlic, potatoes and carrots.
Step 3
Heat 1 tbs of olive oil in a skillet over medium heat. Add onion and garlic. Once onion and garlic have softened some, add potatoes and carrots. Saute until veggies soften.
Step 4
Chop tomatoes and tomatillos.
Step 5
Once vegetables in skillet have softened, add them to the pot with the beef. Pour in broth and beer and bring to a boil.
Step 6
Add tomatoes, tomatillos, oregano and bay leaves to stew. Bring to a boil and reduce to simmer.
Step 7
Simmer for 1 hour or more depending on your consistency preference.
