I generally use two lemons but depending on how lemonely you like it, one is enough. If you have a drum stick or wing lovers in your house this is GREAT made with the whole chicken instead of white meat only.

Instructions

Step 1
Preheat oven to 375
Step 2
Heat a pan on high with olive oil and place chicken breasts in the pan skin down to get a little crisp. 30-40 seconds will do.
Step 3
Put the chicken in a baking dish large enough that they have some room
Step 4
Keep the same pan on the heat and add more olive oil. Cut the sweet potatoes however you like, thick slices are good.
Step 5
Put the sweet potatoes in the pan for 30-40 seconds each side to get a little caramelized, then add the sweet potatoes in the baking dish with the chicken.
Step 6
Keep the same pan on the heat and add more olive oil. Cut up the onion and belly peppers, give them a quick sauté to coat in olive oil, and then add them to the baking dish with the chicken.
Step 7
Squeeze the entire lemon over the entire thing, and add salt and pepper liberally.
Step 8
Bake at 375 for an hour and a half. Check on it after an hour and stir vegetables so none get too over cooked.
