Instructions

Step 1
Chop 6 slices of bacon, and in a large skillet over medium heat, cook until crispy.
Step 2
Turn off heat, transfer bacon to a paper towel-lined plate, and drain all but 1 tbsp bacon fat from pan.
Step 3
Return skillet to medium heat and add 1/2 chopped onion and 1 lb quartered Brussels sprouts. Cook until sprouts start to soften.
Step 4
Season with salt and pepper, and add 1/4 tsp crushed red pepper flakes. Add 2 tbsp water cover skillet and cook until sprouts are tender and water has evaporated, 5 minutes (If water evaporates before sprouts are tender, add more water to skillet and cook a couple minutes longer.)
Step 5
Add 2 cloves minced garlic and cook 1 minute. Make 4 wells in the hash, then crack 4 large eggs inside each well.
Step 6
Season with salt and pepper, replace lid and cook until eggs are cooked to taste, 5 minutes for a just-runny egg. To with cooked bacon.
