Instructions
Step 1
In a blender add spring onion, thyme, garlic cloves, scotch bonnet pepper, bouillon cube, all spice, brown sugar, lemon juice and oil

Blend until smooth and set aside
Step 3
Check to see that fish is gutted and well cleaned
Step 4
Remove fish fins with a kitchen scissors
Step 5
Place fish in a dry non-stick baking sheet
Step 6
Make incisions across the body of the fish
Step 7
Coat the fish lightly with salt then add spice blend
Step 8
Massage the spice blend into all parts of the fish including the insides
Step 9
Cover banking sheet with tin foil and allow to marinate for 2-3 hours
Step 10
Remove tin foil and grill or broil for 20-25 minutes
