Instructions
Step 1
Add all the ingredients to a blender and blend until smooth.
Step 2
Add the chicken into bowl after washing in vinegar and lemon juice then rinsed in water, and add to a bowl.
Step 3
Pour the blended mixture over the chicken and ensure all the chicken has been coated in the marinade, cover and leave to marinate overnight in the refrigerator.
Step 4
Remove from the refrigerator and allow to reach room temperature. For best results cook on a BBQ or Cook for 3 minutes on each side in a griddle.
Step 5
Place the cooked chicken on a baking sheet and coat with the remaining marinade add to a pre-heated oven at 189 degrees fan and cook for another 10-15 minutes, cut the thickest piece to ensure it is cooked through.
Step 6
Plate up, serve with salad or rice, lick your lips and enjoy.
