Instructions

Step 1
Begin by soaking pine nuts in water with a pinch of salt overnight.
Step 2
Next day add to a pressure cooker with the soaking water and pressure cook on high for 15 minutes. Strain off liquid.
Step 3
In a pan add shallots and garlic and sweat until translucent. Add pine nuts and lightly toast swirling the pan constantly for around 4 minutes. Deglaze with white wine and reduce until almost dry. Add stock and reduce by half.
Step 4
Turn the heat to the lowest setting and start incorporating butter 1 tbsp at a time. Then add the cheese a little at a time until fully incorporated. Taste now and adjust seasoning with salt and pepper. Serve immediately
