Sweet Potato Souffle

Go-to sweet potato dish; Thanksgiving staple. Vary the number of sweet potatoes by the number of people ~ one per person. Add the milk as necessary to smooth out the Souffle. Add the cinnamon as preferred. If Harrison eating, do not add the pecans due to nut allergy.

Bring pot of salted water to a boil; Peel and slice the sweet potatoes

Cook sweet potatoes in pot for 30 minutes until fork pierces easily

Drain sweet potatoes in colander

Grease a large casserole dish with butter; put the butter in the dish and add the sweet potatoes, sugar, salt, and milk. Mix. Add the cinnamon and mix. Use a hand blender to whip together until smooth. Sprinkle the pecans on top (if using).
