Instructions
Step 1
Chop your zucchini, broccoli and chard.
Step 2
In an oven dish, add your feta, zucchini, broccoli, chard and peas, season with salt, pepper and a drizzle of extra virgin olive oil, cover with aluminium foil and bake for 30 mins (180C/360F). Remove the foil for the last 5 mins.
Step 3
If your veggies need some extra baking, simply leave them in the oven a little bit more.
Step 4
Add your baked feta and green veggies in a food processor and mix everything until creamy, adding a drop of extra virgin olive oil if necessary,
Step 5
In the meantime, boil your pasta in some salted water for the time indicated on the package. Drain.
Step 6
In a bowl, mix your pasta with your green feta sauce, adding some pasta water to make it mamma mia!
Step 7
Serve with some grated Parmigiano on top.
