Instructions
Step 1
Coat the vegetables with olive oil and season with salt and pepper to taste.
Step 2
Place in a roasting pan and roast at 400 degrees until soft and the edges are just starting to brown, about 20 minutes. Do check on your veggies about halfway though and give them a good mix to help prevent burning.
Step 3
While the vegetables are roasting cook your pasta noodles until Al dente, about 8-10 minutes depending on the brand. Strain and set aside.
Step 4
In a medium sized bowl mix together the marinara sauce, Greek yogurt and Italian seasoning. Add pasta noodles and mix until fully coated.
Step 5
In a 8x8 or 9x9 pan add 1/2 of the sauced pasta to the pan. Top with 1/2 of the vegetables. Then add remaining pasta and top with remaining vegetables. Cover the top with cheese.
Step 6
Cover with aluminum foil and bake at 350 degrees until the cheese is melted, about 5 minutes.
