Instructions
Step 1
To make the marinade, in a small bowl, whisk together lemon juice, orange juice, lemon zest, olive oil, honey, garlic, and cilantro. Pour marinade over shrimp, toss to coat shrimp well, and let marinate for 30–60 minutes.
Step 2
To make the avocado-cilantro crema, in a food processor, combine the avocado, yogurt, garlic, lime juice, cilantro, 2 teaspoons salt, and a few turns of the pepper mill. Process on high until the crema is smooth and fluffy. Cover with plastic wrap and place in the refrigerator until serving.
Step 3
Prepare a charcoal or gas grill for direct grilling over medium-high heat. Season shrimp evenly with salt and pepper. Place shrimp on the grill directly over the heat and cook for 2 minutes. Flip shrimp over and cook another 2 minutes, or until shrimp are pink on the outside and creamy white on the inside.
Step 4
Spread an even layer of the avocado-cilantro crema onto a serving platter and place grilled shrimp on top (or serve on the side). Garnish with cilantro and serve.
Step 5
Note: These shrimp can also be cooked on a grill pan or in a heavy-bottomed frying pan
